油爆肫花

1、主料:鸭肫5只;

2、调料:绍酒25克、蒜头10克、精盐1.5克、味精1克、干淀粉2克、水淀粉2克、肉清汤30克、菜油750克(或者实耗50克)。

3、将每个鸭肫铲去外皮洗净,切成四块,在每块上交叉直剞约四分之三深度的花纹,加上绍酒5克、精盐1克及干淀粉搅拌均匀,放入盛器。蒜头用刀斩成末待用。

4、取一只碗,放入肉汤、绍酒、精盐、味精、水淀粉调成卤汁。

5、炒锅上火,放入菜油,烧至八成热,将肫花放入锅内过油,待花纹张开,肫内断血水,倒入漏勺沥油。

6、原锅上火加少量菜油,倒入蒜末略煸,再倒入调好的卤汁、肫花。用手勺推动,晃动炒锅,再淋上菜油,翻锅装盘即成。
