焖什锦野鸭

1、主料:野鸭1000克,辅料:火腿10克,肥瘦猪肉100克,白菜150克,蘑菇(鲜蘑)25克,虾米15克,鸡蛋清25克,调料:大葱10克,姜15克,醋25克,玉米淀粉5克,盐12克,味精2克,料酒15克,胡椒粉1克,香油5克,香菜8克。

2、将肥嫩野鸭去皮,除去内脏,洗净血污,剁成块(2厘米见方);

3、野鸭块投入沸水锅中焯一下,捞出洗净;

4、将猪肉剁馅装入碗中,加入鸡蛋清、淀粉和精盐2克,搅匀上浆;

5、白菜洗净去叶留梗,切成骨牌块;

6、蘑菇洗净,切成小片;熟火腿切片;分别将葱、姜切细丝;香菜洗净切段;

7、将锅内放入清水500毫升烧沸,投入白菜块焯一下,过水冷却;

8、锅内另换高汤500克,烧至八成热时,将调味的猪肉馅挤成丸子(直径为2厘米)入锅氽熟备用;

9、另取一锅置于旺火上,放入高汤1000克、野鸭块、蘑菇片、精盐、醋、料酒和味精;

10、烧沸后改用小火炖于野鸭块九成熟时,加入白菜块、猪肉丸子、海米(虾米)、熟火腿片、葱丝、姜丝,继续炖至白菜块酥烂;

11、撒入胡椒粉和香菜段,淋上香油即可。
