碗耳糕的做法

1、原料:大米1千克,红糖20克,白糖30克,食用碱5克。

2、选用优质大米淘洗干净后,浸泡4-6小时,换水磨成米浆。

3、将部分米浆在净锅内加热成熟芡,离火倒入剩余米浆混和均匀,熟芡无结块时,慢慢发酵至表面起大泡后,根据醒发程度施碱中和,再与经溶解、过滤、去杂质的红白糖拌合均匀,注入蒸笼模型中,以大气蒸七、八分钟即熟。
