鸡蛋里的蛋白质一旦受热后就容易变性,也就是其结构容易受到破坏,而变性的蛋白质会分解成小分子的氨基酸,蛋白中的半胱氨酸(C3H7NO2S)和蛋氨酸(C5H11O2NS)这两种氨基酸都含硫元素,在煮鸡蛋的过程中,硫元素就很容易从蛋白质中“解脱”出来,形成硫化氢,当硫化氢遇到鸡蛋中的铁元素时,就会与铁发生反应,形成硫化亚铁,导致蛋黄变黑。
