甜酒冲蛋技巧

1、糯米浸泡2小时,取350克制成甜酒。甜酒制法为:浸泡后的糯米蒸30分钟,拌一点热水后再蒸15分钟,然后用冷水冲浇糯米,至不烫手时,沥尽水分,倒入盆内,将酒曲粉末2。5克均匀地撒在米上,搅拌均匀,然后盛入瓦钵内,稍压紧,加盖,在30℃温度下放置34小时即成。

2、锅内放清水1750克烧沸,倒入用150克浸泡过的糯米蒸熟的饭,煮至表面软滑,水成清糊状,加入甜酒一半,搅散,成热甜酒。

3、取碗1个,分别磕入鸡蛋一个,用筷打散,将滚开的热甜酒冲入碗内,轻轻搅动使鸡蛋成丝状,每碗内再均匀地放入剩余的冷甜米酒,加入桂花糖、白糖、红丝及碎桂圆肉,香元条即成。
