敞锅煮皮,盖锅煮馅。敞开锅煮,水温只能接近100摄氏度,由于水的沸腾作用,饺子不停地转动,皮熟后,再盖锅煮,温度上升,馅易煮透。大约10~15分钟左右,饺子飘上来了就熟了,最好在飘上来之后再放点凉水,再开锅捞出即可。
