酱鹅头腌制方法

1、原料:鹅头2只(约200克)。

2、调料:老汤500克,葱、姜各5克,盐、胡椒粉各2克,黄酒6克。

3、把鹅头洗净,泡去血水,把舌胎和喉管去掉,加入盐、胡椒粉、黄酒、葱、姜腌制4小时,入蒸笼旺火蒸20分钟至八成熟,取出。

4、另取净锅,加入老汤,大火烧开,下入鹅头,改小火熬制20分钟至入味,关火,将鹅头浸焖30分钟即可食用。
