1、鲥鱼曾与黄河鲤鱼、太湖银鱼、松江鲈鱼并称中国历史上的“四大名鱼”。早在汉代就已成为美味珍馐。每100克鲥鱼中含有水分65克,蛋白质16.9克,脂肪16.9克,碳水化物0.2克,灰分1克,钙33毫克,磷216毫克,铁2.1毫克,硫胺素微量,核黄素0.14毫克,尼克酸4毫克。

2、鲥鱼味鲜肉细,营养价值极高,其含蛋白质、脂肪、核黄素、尼克酸及钙、磷、铁均十分丰富。

3、鲥鱼的脂肪含量很高,几乎居鱼类之首,它富含不饱和脂肪酸,具有降低胆固醇的作用,对防止血管硬化、高血压和冠心病等大有益处。
