秋葵籽和辣椒籽一样都可以食用,且含有丰富的营养物质。秋葵富含蛋白质、维生素及矿物盐。种子含有较多的钾、钙、铁、锌、锰等元素;能提取油脂和蛋白质;具有特殊的香味,可榨油,又可作为咖啡的添加剂或代用品;种子含油约15~20%,油脂含少量棉籽酚,微有毒,经高温处理后可食用或供工业用。
