三两盐。在腌制上,咸蛋的腌渍方法随地区而不同。北方最常用的方法是盐水浸泡法。把食盐放入容器中,倒入开水使食盐溶解,待冷20℃左右时,将蛋放进去浸泡。盐水浓度以25%为宜即1000克食盐加4000克开水,夏季盐水浓度可略为提高,过20天左右就可以食用了。
