1、冰箱发酵面团一般8小时。盆中加入300克面粉,10克白糖,(白糖能促进发酵)3克酵母粉,酵母粉比例为100:1。

2、先把干粉搅拌均匀,再倒入温水和面,(水温25℃左右)边倒边搅拌。一直搅出面絮的状态,淋入一勺食用油,10克左右,能增加面团的延展性,避免馒头开裂,下手开始揉面。大约3-5分钟的时间,揉成软硬适中的面团,摸着光滑就行,盖上一层保鲜膜,先常温放半个小时,能观察到微小的气泡后,再放进冰箱冷藏中。
